Coconut Flour and Banana Pancake Feast!

Happy Pancake Day! I’m sure you are all looking forward to baking away your pancake treats and I’ve got the perfect recipe for you to enjoy guilt free pancakes today with no dairy, gluten or refined sugars and taste super yummy.

I’m not actually a pro at pancakes, I don’t usually whip these up and it did take me five flips until my perfect pancake appeared! Today I’ve decided to opt for coconut flour as it’s naturally sweet and I love coconuts, best flavour on the planet, and the second best flavour – banana. So lets make banana coconut pancakes!

RECIPE

Ingredients

For The Pancakes:

4 Tbsp Coconut Flour

2 Tbsp Organic Raw Coconut Oil

2 Eggs – Local and organic please!

1 Slightly Blackened Banana

For The Topping:

Blueberries

1/2 Pomegranate

Energy Bar Pieces – I used a Sour Cherry and Buckwheat Tribe Energy Bar

1 Tsp Desiccated Coconut

For The Chocolate Drizzle:

2 Tbsp Organic Raw Cacao Powder

1 Tbsp Organic Raw Coconut Oil

Method

Melt the coconut oil over a low heat, this should literally take seconds, then pour into a mixing bowl and crack the eggs in

In a small bowl mash the banana with a spoon or a fork and then add it to the eggs and coconut oil

Ad the flour bit by bit stirring until you have your batter, you can add a little bit more coconut oil if it is dry, and a bit more flour if it is too runny, you want a slightly thick consistency

Make your pancakes! I used a smaller frying pan and heated a tiny piece of coconut oil before each pancake, poured 2 tablespoons for 1 pancake and as the edges start to brown then flip your pancake over – the coconut oil will really help to keep it from sticking

In a large bowl slowly break your pomegranate to remove the seeds, this is actually easier to be done in a bowl of warm water as it breaks easily

Top your pancakes with the fruit, energy bar pieces and the desiccated coconut

On a very low heat, put the coconut oil in a small saucepan. As it starts to melt, add the cacao powder and stir with a wooden spoon until it has completely melted

Drizzle this chocolate mix over your pancakes and enjoy your delicious pancake day treat!
